"Mmmmmm meatballs!"

Those were the words of my husband when he found out what I would be making tonight for Sunday dinner. He loves meatballs and I have never made them for him. You see, I have no interest in any red meat of any kind. I used to be a vegetarian until I met Logan and then he introduced me to chicken, turkey, bacon, ham, and some pork. I still don't eat those too often. Since marrying this meat lover, I have always wanted to make some really good recipes for him. Tonight I made this and he LOVED it. I was so proud of myself. :D 

It's So Tiny!

I found this cute little grater while browsing kitchen gadget websites. It is the Microplane Premium Zester/Grater 46020. Sure you may think it's just a tiny grater (no big deal), but haven't you ever had those moments in the kitchen when you're trying to grate your cheese with some HUGE grater that only makes grating cheese or whatever you use it for so much more awkward? This little guy wont get in the way as you grate cheese, garlic, or zest any citrus. You can find it at Cookware.com for about $20 but right now it's on sale for $14.95!

Fresh Fast Flavorful!

Yesterday I made a yummy recipe from my 'Fresh Fast Flavorful' recipe book.

It's my Martha Stewart cookbook that I bought from (yet again) William-Sonoma. I love this recipe because it's pretty simple and also pretty healthy!

Chicken with Tomatoes, Olives, and Cilantro

Ingredients:

1 tablespoon olive oil

4 boneless, skinless chicken breast halves (1 1/2 to 2 pounds)

Coarse salt and freshly ground pepper

1 onion, halved lengthwise and thinly sliced

1 pint cherry tomatoes, halved

1/3 cup pitted green olives, halved (I didn't pit them)

1 tablespoon fresh lime juice (or lemon)

1/4 cup packed fresh cilantro

1. In a large skillet, heat oil over medium-low. Season chicken on both sides with salt and pepper, and cook until lightly browned and just cooked through, turning once, 10-15 minutes. Transfer to a plate; cover loosely with aluminum foil.

2. Raise heat to medium; cook onion, stirring occasionally, until softened, 5 to 7 minutes. Add tomatoes and olives; cook until tomatoes soften and release their juice, 1 to 2 minutes. Remove from heat, and stir in lime juice and cilantro. Season with salt and pepper. Serve chicken topped with tomato mixture.

I'm a sucker for anything made of wood for the kitchen. Although it scares me to death to buy many wooden items (for fear of them drying out), I still think they are absolutely beautiful.

Doesn't this space just scream 'relaxing' to you? I love how they bring color to this neutral kitchen by the accents, flowers and plants. It would be really easy to change the look of this kitchen because you would just swap out the accents for a new palette of colors.
